It has been crazy busy around here with the holidays, but I wanted to make sure that I shared my meatball recipe with you as promised. The original recipe came to me from my mother-in-law. I tweaked it a little and they were a hit with the whole family. There were NO leftovers! LOL! I cook them ahead of time in the oven and put them in the refrigerator overnight. Then they were ready for me to just pop into the crock pot the next day with some marinara sauce. Super easy! Enjoy!

Clean Eating Turkey Meatballs

Turkey Meatballs

(makes around 15-20 meatballs, depending on size)

Ingredients: (organic & non-gmo if possible)


1lb lean ground turkey (or meat of choice)
1 egg slightly beaten
2 tbsp milk
½ c italian seasoned gluten-free dried breadcrumbs (can substitute standard breadcrumbs or quinoa flakes)
½ tsp pink himalyan salt
1 tbsp parsley
½ tsp garlic powder
¼ tsp black pepper
**Marinara or sauce of your choice

I'm heading into week 3 already??? How is that even possible? This program is going really fast. It could have something to do with the fact that the holiday is making time go fast in general...Or it could be that I love it so much that I look forward to each workout! I know you may want to smack me right now for saying that, but it is honestly the truth. Now...I'm not going to lie. When it is 4:30am and it is time to head downstairs to do the workout, I am TOTALLY whining and complaining. But as soon as I get started I'm fine. And when I'm done, I feel like I could do anything! I can't get over the changes in my endurance already. Can you imagine how different it will be for me in 6 more weeks?

Commitment means staying loyal to what you said you were going to do long after the mood you said it in has left you

This week's workouts were the same as week 1. Friday Fight continues to be the toughest of them all. There are not as many breaks and Shaun T goes all in! He even says at one point and I quote "Oh my God, this is crazy.". LOL! Probably one of my favorites is Tabata Power. There is a lot of body weight strength work in that one. I can already tell a difference in the quality of my push ups. This coming week we switch to Tabata Strength. Seriously, my triceps have been sore for two weeks straight so I can't imagine what Tabata Strength is going to be like!

Happy Fri-YAY! Here are some of my favorite things from the past week!

1. Sunday the boys were in a Christmas program at church. Man they were so stinking cute as shepherds! They did a great job. My 3 year old even did a speaking part as well. It just fills my heart that they have such a love of our church and Jesus!


2. So here’s the honest truth. When I decided to start Insanity Max:30, I was nervous. I had been doing Focus T25 but I still struggled some when it came to my cardio. I have done the original Insanity before and never made it through a whole round. But I have to tell you, I LOVE this workout. We just wrapped up week 2 today and I can’t believe how much my endurance and strength is improving already. I even said to my husband a couple of times today “Last week I couldn’t do this move at all and this week I made it 15 seconds!”. LOL! My husband and I both improved our max out times from last week by almost 2 minutes. I can’t say enough about it!

This clean eating crock pot turkey chili is one of my staple dinners especially during these cold winter months. It is a family favorite. I love that it is quick and easy and something that I can just throw into the crock pot in the morning and forget it until dinner. I hope you enjoy!

Ingredients: (organic & non-gmo if possible)


1 lb lean ground turkey
2 Tbsp dried minced onions
3 15oz cans beans of choice (Ex. Black, Pinto, Kidney, Lentils, Garbanzo, etc.)
1 15oz can diced fire roasted tomatoes
1 15oz can low sodium tomato soup (I use Amy’s brand)
1 Tbsp chili powder
1 tsp ground cumin
½ tsp onion powder
½ tsp garlic powder
½ tsp dried oregano
½ tsp smoked paprika
1 tsp pink Himalayan salt

Holiday Blessings
I just love this time of year. I love watching the joy and excitement in my children as they await the arrival of Santa. I love celebrating the reason for the season and holding that close to my heart. Today we will watch our boys perform in the children’s Christmas play at church and that warms my heart. I know that it can be stressful getting caught up in the holiday hussle and bussle. We can lose sight of what is really important. I hope that you are taking the time to count your blessings this holiday season!

So...on to the fitness stuff. :) If you follow me on social media, you know that I received my Insanity Max:30 program this week! WOOHOO!! I was going to wait until after I finished Focus T25 to start but I was just too excited. My husband agreed to join me. Doesn’t he look so excited? Haha!

Happy Friday! Can you believe that we are less than two weeks from Christmas? It is so fun to watch the boys and their excitement this time of year. There is nothing like seeing Christmas through the eyes of children. Love! Here are some of my favorite things from the past week:

1. Speaking of Christmas, I finally started shopping! LOL Fortunately, I was able to get almost all of it done in one trip. Last year I did almost all of my shopping online the day after Thanksgiving, but I was a major slacker this year. At least that is what the stores tell me since everyone is advertising their ‘last minute’ gift sales. Last minute? I mean, I know there are only two weeks left, but I don’t know if I would go as far to call this last minute! :)

2. My Insanity Max:30 came this week! YAY! I’m LOVING these workouts. Getting up at 4:30am to workout with my hubby is a little rough, but it is fun to do the workouts together. This program is awesome. I can’t wait to see my results after the 60 days!

3. I tried a new meatloaf recipe this week. I’m not always very confident in the kitchen. So I wasn’t sure how it would turn out, but it ended up being really good! My youngest deemed it as “super duper good!” You can find the recipe here.

Ingredients: (organic & non-gmo if possible)

1 cup salsa (I use Drew’s brand. The type of salsa will affect how spicy, etc. it is)
1 tbsp chili powder
¼ tsp garlic powder

Happy Sunday! I have found that since I started blogging, the weeks seem to fly even more quickly! I feel like I just finished the last update and it is a new week again already. :) Last week’s workouts were somewhat of a struggle. I have been fighting a cough for several weeks now and for some reason it definitely peaked last week. It is pretty tough to push through a workout when you are having coughing fits. But I did my best and that is what matters! We also started our Coach Only Challenge with my team this month. I am always active in my challenge groups but it is fun to be a challenger again with my fellow coaches. It is an extra layer of accountability that I love!

This week I will start the Beta phase of T25. During this phase, all of the workouts are taken up a notch. Now, originally I was going to finish my round of T25 before starting Insanity Max:30. However, I don’t think I can contain my excitement to try out this new program. It should be here in the next couple of days so although I have planned the week for T25, I will most likely be switching my workout. The good news is that one of my coach friends already got hers so she gave me a sneak peek at the meal plan. I was able to make this week’s plan work for both programs so that shouldn’t change once I get started. You may be thinking ‘Wow...seriously? She is this excited over a workout program?’. Yep. I am! I have been watching coaches from the coach test group do these workouts for the past several weeks and I can’t believe the results they are getting. Am I terrified?? YES! LOL! Is it going to be HARD? Yes! But I know that if I put my mind to it, I can do anything! I can’t wait to kick off this new journey with my accountability group. Would you like to join us? Um...where is the time going? I can't believe it is December! Are you started shopping yet? Last year at this time, I already had my shopping done. This year has not been quite so productive. :P Anyway, here are my favorite things from this past week!

1. My husband had a long weekend and got to spend 5 days together with us through this past Monday. Family time is invaluable to me!

2. Our house is all decorated for the holidays. There is something about sitting in the living room in the glow of the Christmas tree. The boys are just filled with the idea of Christmas magic and to watch the joy and excitement in their eyes is the best!

3. The Elf on the Shelf...have you heard of it? This week I'm celebrating that we made it the whole week without forgetting to move him! Ugh...do you know how many times I had to crawl back out of bed because I forgot?!



4. Insanity Max30 was released this week! I'm so excited for this new program. If you have been following me for long, you know I have been doing Focus T25 for the past 5 weeks. Originally I planned on finishing it first before moving on to Max30 but I can't contain myself. I can't wait to get started! I will have a private group on Facebook doing it with me. If you want to join us, let me know!


5. I started a coach only challenge this week with my team. I always participate in the challenges that I do for my customers, but it is so fun to participate with others on my team and be a challenger myself!

Family Workout Time
Wow! Can you believe Thanksgiving has already come and gone? Last week was CRAZY at our house. We don’t have family close by, so the holidays often mean traveling. It can be exhausting but we love spending time with our family so it is worth it for sure! We started off our holiday weekend with a little family workout. :)  It is so fun to watch the boys working out and wanting to be strong and healthy like mommy and daddy. I find myself having a proud mommy moment every time I look at this picture!

I did really well with nutrition all last week until Saturday. I’m not going to lie. We had my family’s Thanksgiving dinner and I was weak to all of the good food. There are some dishes that only come out for holidays so I allowed myself to partake. I won’t feel guilty about it. I will let it go and move on because this is all about a lifestyle change. It is NOT a diet. I am working towards finding a balance that works for me!

Can you believe Thanksgiving is next week? Where has the past year gone? I feel like I blinked and it went from summer to winter. The temperatures here are definitely saying ‘WINTER IS HERE!’ :) Along with this time of year comes holiday season. We all get super busy. We skip meals and then when we finally get the chance to eat, we over indulge. We have work parties and holiday parties on the weekends. There are holiday treats EVERYWHERE! We don’t stand a chance to the expanding waistline, right? WRONG!! You can totally survive the holidays, enjoy yourself and not have to add a notch to your belt!

Wouldn’t it feel amazing to come into the new year with a different perspective than years past? I don’t know about you, but I have started many new years in a food coma from the 2 months prior. It doesn’t have to be that way. Surviving the holidays doesn’t mean that you can’t enjoy the parties, food and drinks. It just means that you have to find the balance and I can help you!

T25 Clean Eating Meal Plan and Progress Update

Fit is not a desitination, it's a way of life
I'm going to be honest. The first week and probably a half, I was questioning whether T25 was going to be the program for me. It is always hard to adjust to a new program. Especially when you are doing something like PiYo and switch to a style like T25. I often tell my challengers that they need to give a program a week or two to really settle in, adjust and find your groove. That is true for me as well. I know if I stick it out, I will adjust and quickly be saying how much I love it. :) That epiphany happened for me Friday morning. Shaun T was kicking my butt on double day with lower focus and I thought...I am going to make it through the whole thing without having to stop and curse him! LOL! We just have to keep pushing. I know it is hard. I know it hurts. No one is watching so you could stop...but YOU know. You are only hurting yourself. You have to make that decision not to give up. If you have to modify, fine! At least you are still moving and guess what, one day you will surprise yourself and suddenly you won't need to modify anymore! I have learned how strong I really am from pushing through my struggles. You can do it too!

So I'm really looking forward to this next week with my renewed vigor and dedication. As I head into week 3 I know it is just going to keep getting better and I will keep getting stronger. That's not to say I won't throw a curse or two Shaun's way. ;)

You know I'm all about spreading motivation, love, and positivity. So I'm going to link up with her and do the same on here. It's so easy to get wrapped up in the negative, hard times that we are going through. I hope that you will also take the time each week to recognize the great things that happen in your life!

So here are some of my favorite things from this past week:

1. I don't share pictures of my kids often online. It isn't because I don't think they are totally adorable and I want to share their cuteness with the world, but I just want to protect them the best I can. But I will share occasionally. This week after much deliberation, I decided to push the baby tank on a run. It's heavy. It's hard. All of that didn't matter though because Gavin and I had so much fun! :) He even got out to run with me for a while. I'm so grateful for this quality time that I get with him!

Healthy Egg Salad Wrap

I love egg salad but it isn't always the healthiest option. So today I made a more clean version. I made it with one egg, but it could easily be doubled.  You can also try adding other things to it like tomatoes, spinach, etc.  Let me know what you think!

Healthy Egg Salad Wrap

Ingredients: (organic & non-gmo if possible)

1 Hard boiled Egg
1 TBSP Plain Greek Yogurt
1 tsp Dijon Mustard
1 TBSP Salsa
Tortilla

Instructions:

  • Chop egg.
  • Mix egg, yogurt, and mustard together in a bowl.
  • Spoon mixture onto tortilla, lettuce or wrap of choice
  • Top with salsa or toppings of choice 
  • Wrap and enjoy!

T25 Week 2 Meal Plan & 10k Training

10K training
10K Training
10K training? Are you wondering if that was a typo? I can't remember if I mentioned this last week, but I signed up for another 10K. I find that for me, if I don't have an end game in mind then my motivation suffers. So when my friend asked if I wanted to do a 10K with her, I said OK! Now...I'm not entirely sure that I'm ready. I haven't done more than 4 miles in a month. My long run on Saturday was rough.  I tore a contact so I was running with only one usable eye. :P That made things a little tricky.  I spent just as much time trying to not trip over random rocks and sticks as I did trying to keep pace!! HAHA! My legs were super tired from T25 this week also so it was just rough all around. I will try for 5 next weekend and then the following weekend is race day. But here is what really matters, I am trying my best and I'm spending some awesome quality time with my friend! I'm really looking forward to it. And I'm not going to lie, I'm REALLY happy that the course is flat! LOL! Running where I live, it is impossible to go anywhere without a hill. :P Overall I feel good. I think I will be able to finish the 10K with a respectable time and hopefully not hold my friend back.

My tips for staying motivated with your health and fitness.
I can’t even count the number of times I have started a change in diet or a workout program, just to fall off the wagon a couple of weeks later. It’s so exciting at first, right? You have this shiny new plan. You are determined. THIS time you are going to finally make it work. And then a week goes by and the newness wears off. Life gets busy. You miss a workout here. You lose control of a food choice there. Suddenly weeks have gone by since your last workout. All of the progress you made with your nutrition is gone. You think ‘What’s the point? I’ve already screwed up. I’m back at square one.’ You’ve lost all motivation.

Does this sound familiar? Have you been there too? It can be tough to stay motivated. I understand. I have been there too! There are still days when I struggle to make myself do my workout or make the right food choice. I just wanted to share a few tips that have helped me stay on track. Hopefully they will help you also!

Let’s face it. The holidays can be tough. Our lives get crazy with festivities, shopping, eating and drinks. Is it possible to survive the holidays and come out on the other side feeling like dirt? I’m a little off schedule this week. I spent the weekend away dealing with the loss of a family member, so I’m a little out of sync. Tips for staying healthy on Halloween.

Ugh...Halloween.  I think it tends to slip under the radar as a holiday to worry about when it comes to nutrition.  There is no big feast.  There are a few parties leading up to it sometimes but nothing like the rest of the holiday season.  If you have kids, candy starts slowly coming into the house here and there from holiday parties at school.  You have a little piece of candy here...and then one more there...and before you know it you have eaten an entire bag!  It's sneaky how those calories add up!  So, let's step away from the candy and treats and try some of my tips to keep you from over indulging. :)

21 Day Fix Week 3 Clean Eating Meal Plan & Progress Update

Seriously? I’m already starting week 3? Time is flying!! I LOVE LOVE LOVE the 21 Day Fix workouts. They are such a perfect mix of cardio and strength training. They would be perfect for someone who wasn’t completely comfortable with weights and needed some guidance as well. I’ve been feeling really strong when it comes to the workouts. This week is doubles week. So I will be doing two workouts a day. :) Is it weird that I’m looking forward to it?

Now...let’s talk about nutrition. I was really sick at the beginning of this week. I have some issues with GERD (silent reflux). Sometimes (still unknown why), it becomes ‘not so silent’ and makes me pretty miserable. I get a bronchitis-like cough. It’s awful and it’s really tough to get back under control. So for the first 3-4 days of last week, I didn’t eat much. Every time I did eat, I would feel pretty bad.  I was lacking energy and exhausted. I drank a lot of apple cider vinegar and ginger tea. By the end of the week, it is finally somewhat under control again. So, even though I have been trying to stay away from the scale until the end of these three weeks, I’m sure it will be affected. :( Sometimes we have situations in our lives that are out of our control. All we can do is our best and move on! So this week now that I’m feeling better, I am back to eating all of my containers and staying on track. I will need all of that nutrition to fuel my double workouts!

Pumpkin Pie Oatmeal

Last night I wasn't feeling well so I decided to just have oatmeal for dinner. Since it is the season of pumpkin everything, I decided to do a pumpkin pie version. It's super easy! Unfortunately, I didn't get to eat it all because the little man stole it from me! I think it is safe to say...kid approved! Haha!


Pumpkin Pie Oatmeal - Quicky, Easy & Kid Approved!!

 

Pumpkin Pie Oatmeal

(makes 1 1/2 cups)

Ingredients: (organic & non-gmo if possible)

1 cup oats
1/2 cup milk of choice ( I use almond milk)
1/2 cup water
1/2 tsp pumpkin pie spice
1/4 cup pumpkin puree
1 Tbsp maple syrup

Instructions:


Stove (preferred method): Add all ingredients to sauce pan. Heat to simmer and then lower heat to allow oats to soften. Cook on low for 3-5 minutes or until oatmeal is thickened.

Microwave: Add oats, milk, and water to a microwave safe bowl. Microwave for 2 minutes or until oats are cooked through. Add pumpkin, syrup and spice.

I love this time of year. To me, it means beautiful fall colors, pumpkin patch visits, apple cider, trick or treating, holidays, family, friends, parties, and the list goes on! Doesn’t it seem like once Halloween arrives, the rest of the year just flies by? Before you know it, Thanksgiving is here, then you are caught up in the hustle and bustle of Christmas, and then Christmas and New Year’s Eve just sneaks right in there too! Our lives get hectic. Our fitness and nutrition takes a back seat. In January, we emerge from the craziness and feel like we have to start our fitness journey all over again! I have been there! I have done this same cycle year after year. THIS year will be different and I’m inviting you to join me!

21 Day Fix Week 2 Meal Plan & Progress Update

I have to tell you that I am LOVING the 21 Day Fix program. Seriously. I love the way she does the workouts in rounds. I am never looking at the clock and the 30 minutes go by so quickly. I love that I was so sore the first few days even though I have been working out and running consistently for the past year. I love that I am dripping sweat by the end of each workout. I love that there is a fantastic mix of cardio and weight training. I love that the containers make tracking my nutrition so much easier! This program really is one of my favorites! I was on point with all of my workouts this week. I struggled slightly with my nutrition but I did MUCH better than I have in the past. My biggest issue was eating enough. There were some days when I was way under what I needed to eat. However, I have to say that my accountability group has been amazing. We have been posting our meals and giving so much support. These ladies are doing AWESOME!!!

Rock Bottom

Everyone's journey is so unique. We all start from a different place. We have our own reasons, setbacks, obstacles, or failures that have brought us to 'rock bottom'. Rock bottom isn't a fun place for anyone. You feel lost. You feel alone. It's hard to see a way out. That's where I was 2 years ago when I started my journey. I felt awful. My body had failed me. I was only in my 30s and had already had major back surgery. I was supposed to (at least in my own head) be able to bounce back. My body had other ideas. I was supposed to be pain-free. But I was in pain EVERY DAY. It was different pain than before the surgery but in some ways it was so much worse. I was SO DEPRESSED. As an emotional eater, I turned to food. I just wanted to eat, sleep and cry. That is the reality. It still makes me emotional. I have tears welling in my eyes as I type this and the feelings from that time come rushing back to me. I have a family. I have two beautiful little boys who are depending on me to be mom and I was failing.

I will never forget the day that I hit rock bottom. I was looking at a picture from Christmas and I truly realized where I was with my health and came to the very real truth that if I continued down this path, I would be headed to an early grave. That may sound dramatic but it is so true. I wasn't taking care of myself.

This is when I decided to make a change; for me, for my husband, for my boys. I started walking. That was a feat in itself. I started working out. I started feeling better. I started drinking Shakeology. My body that had been treated so badly and fed so many poor food choices, rejoiced at this change. I got more energy. I set bigger goals. I started talking more about what I was doing and realizing that my story, while to this day is still very personal and painful for me to talk about, may actually be able to help someone. I could inspire someone else to believe that they could get past that dark place. They could get healthy and feel good again. It has given me a purpose. It has been the silver lining in this whole situation. Every time I want to give up, I remember how I felt and how far I have come.

21 Day Fix Week 1 Planning & PiYo Wrap Up

What a crazy week/weekend! I am all out of sorts which is why this post is coming so late. I wrapped up PiYo last week. I actually found myself a little sad on the last day. I will definitely continue to sprinkle some of the workouts in my schedule from this point forward. I really wish I had these great progress pictures to show you but I am always honest to a fault. So here is the story. My nutrition sucked. There it is. I said it. I didn’t stay consistent and as a result, my progress suffered. I was on point with my workouts. The important thing for you to take from this is that nutrition is the MOST important part! Working out is fantastic and will help to keep your heart healthy, but if you don’t put the same effort in the kitchen you will not get the results you are hoping for! Learn from my mistakes!

I love all things pumpkin.You really can't go wrong in my opinion! :P This shake is SO good! I probably use more than a cup of water but it just depends on how thick you like your shakes.  Enjoy!

I'm not going to lie. Until recently, we were a Manwich family. I knew that I didn't like the ingredients in it, but I hadn't been able to recreate it well enough to satisfy the whole family. That is...until now! :) I made this sloppy joe recipe tonight and it turned out pretty good. In fact, my boys, who don't usually care for sloppy joes, loved it! I hope your family does too!

These clean eating sloppy joes are full of flavor and a meal the whole family will love!


Clean Eating Sloppy Joes

 

Ingredients: (organic & non-gmo if possible)


1 lb ground turkey
1 TBSP olive oil
1 green pepper, chopped
1 red pepper, chopped
1/2 medium onion, chopped
1 15oz can chunky tomato sauce (you could substitute smooth sauce if preferred)
1/2 cup ketchup 
1 TBSP garlic powder
1 TBSP onion powder

Instructions:

  • In a large pan over medium-high heat, add oil, onion, and peppers to pan.  I chopped mine pretty small so that they wouldn't take long to soften and so that my boys wouldn't notice them as much.  
  • Cook until onions become translucent and peppers are soft.
  • Add ground turkey to pan and brown in the peppers and onion mixture.
  • Once turkey is cooked completely, add tomato sauce, ketchup, garlic powder and onion powder.  
  • Stir together well and let simmer for 5-10 minutes until sauce thickens.
  • Serve on roll, over potatoes or on a salad.

This butternut squash recipe was deemed by my 6 year old as 'the best ever!' and 'so good!'.  I would have to agree. :)  The cinnamon and syrup make a delicious pairing.  I'm surprised it made it to the table!

Ingredients: (organic & non-gmo)


1 butternut squash, cubed (approx. 3 cups)
2 TBSP coconut oil (or oil of your choice)
1 TBSP maple syrup
1/2 tsp ground cinnamon
1/4 tsp pink Himalayan salt


Instructions:

  • Preheat oven to 425 degrees.
  • Line baking sheet with parchment paper.
  • Mix oil, syrup, cinnamon and salt together in a bowl.
  • Toss mixture over the squash covering each piece.
  • Spread the coated squash out on the baking sheet.  Be sure that you don't crowd the pieces so that they are able to carmelize.
  • Bake in oven for about 45 minutes, flipping once half way through cooking, until golden brown.

PiYo Week 8 (FINAL WEEK!) Progress Update

The past week was a rough one for me. My husband was out of town for work so I was on single mom duty. (Shout out to all of the single parents out there. It isn't easy doing it all on your own!) I was able to keep up with my workouts but I wasn't able to get out for a run all week. I also came down with a fantastic cough so my lung capacity isn't what it should be, therefore I didn't run this weekend either. I'm frustrated. I'm not going to lie. But I'm looking forward to a fresh start this week!

I am still doing physical therapy for my torn hamstring and strengthening my glute. I had a appointment Tuesday. Talk about EMBARRASSING! I was literally dripping sweat. They had to give me a towel. To be fair, I had worked out that morning so my body temperature was already up and they had me on the elliptical first but it was still mortifying. I can't believe I have to show my face there again! :P O'well. I can't be the only one that has had that happen before right?? RIGHT??? Anyone???

PiYo Hardcore on the Floor is an excellent complete core workout that will leave you dripping sweat and feeling stronger than ever!
Anyway, I can't believe this is my last week of PiYo. This program has really exceeded my expectations. I have noticed so many changes in my strength and flexibility over the last 7 weeks. I am really disappointed that my nutrition hasn't been where it should have been because I know that my weight/measurement results would have been much better. But here is the thing, we learn from our mistakes. Every day I'm a little better than I was yesterday. I'm a little stronger, wiser, and smarter. I will keep moving forward. I will continue to work at controlling my emotional eating habits. One day I will look back on these struggles and see how far I have come. A time when food no longer has the control, I do!

Breakfast can be a tough meal for many people especially during the week.  My husband gets up very early to workout and get ready and out the door by 6am.  So I wanted to make sure that he had a quick and easy option available for his breakfast.  That’s why I love the freezer breakfast sandwiches.  Yes, you can buy them pre-made in a box at your local grocery store,  but this way you have much more control over what is in and on your sandwich!  Plus it ends up being cheaper in the long run.  That’s a win-win for me! :) 

I used a whoopie pie pan for making my eggs. It works perfectly, but you could use any type of pan or ramekin with the right size for making the eggs for your muffins.

Easy to make ahead - Homemade Freezer Breakfast SandwichesIngredients: (organic & non-gmo if possible)


12 english muffins
12 eggs

Optional topping ideas:
Cheese
Veggies
Sausage
Ham

Instructions:

  • Preheat the oven to 350 degrees.
  • Lightly spray pan with cooking spray to be sure that the eggs do not stick.
  • Put eggs in pan and break yokes.
  • Cook in the oven for 10 minutes (or until the eggs are cooked through).
  • Take them out and let them cool completely.
  • After the eggs have cooled, assemble the sandwiches per your preference.
  • Wrap the completed sandwich in wax paper, put in a freezer safe bag and put it in the freezer.

To Reheat: To reheat your sandwiches, take them out of the plastic bag and put it in the microwave for 60 seconds (flipping half-way through).

Tips for Getting Your Kids to Eat Healthy Foods

Growing up, food was always one of those things that we did as a family as a reward and that made us happy. Many of my fondest memories from growing up involve some kind of food component, and was often an unhealthy treat. We didn't know any better. And now, as I am raising my own boys, I struggle with making the best healthy choices for them. Sometimes it is hard to tell them no when they want that sugary, unhealthy treat. I just want them to be happy. But I know those treats won't do anything for their hunger, nor their bodies. Now I don't want you to get the wrong idea, I do allow them treats occasionally but for the most part we focus on trying to teach them healthy habits. My hope is that if they learn them now and it becomes a natural part of their lifestyle, when they are older it won't be such a struggle for them to be healthy. It will be natural for them to eat appropriate portions, choose healthy options and to stay active and fit.

So how do I do this? You might be thinking, “my kids fight me over every meal! They don't like things that are healthy!” Mine were too, at first. We have had many battles at the dinner table and, while it is frustrating, I promise it is worth it.

I thought that I would be writing a blog for you today about how awesome The Great Race 10k was for me. I was going to beat last year's pace. I was going to do a personal best. The reality however is that sometimes life happens. My baby boy woke up sick this morning. The kind of sick where your heart just breaks to hear that little, painful cough. My husband had a work commitment so he couldn't stay with them. I have a wonderful friend who was planning on watching the boys for me, even with one of them sick, but I just couldn't do it. As a mom, I want to always be there for my kids when they need me. So I chose to sit this one out and cuddle on the couch with my baby instead. I won't lie. I'm a little bummed. I feel bad for bailing on my running buddy. But I know it was the right thing for me and my family. There will be other races. I'm just going to do my own 10K next weekend! :)

Leading up to this weekend, I was actually feeling pretty good with my running. I had a great 5 mile run last weekend. I only got one short one in this week but I feel like I may finally be getting my groove back.  The pace for my 3 mile run last week was much more like where I was when I was injured originally. I have started seeing a physical therapist for my pain. He has informed me that my right hip/glute area is (and I quote) "crap". LOL So I am doing a bunch of painful strengthening exercises to balance my muscles and get me back to 100%. I hate every minute of it but I know it is a necessary evil. :) We have to work on our weaknesses until they become our strengths. That is the quote I think about the whole time I am fighting through my exercises! haha!  I know that if I keep pushing myself, I will be stronger in the end.

PiYo Week 6, Meal Plan, P90 update & 10K Training

Another week has come and gone.  Time is flying! I can't believe we are heading into the last week of September!  Although I will admit that I'm enjoying the shift in weather.  I love running in this cooler weather!  My 10k is next weekend. I'm feeling a little nervous about it.  To say my runs have been hit and miss is an understatement for sure.  I don't know if I'm ready but all I can do is my best!  I had a pretty good 5 mile run last Friday. I was FINALLY able to conquer the one hill that defeats me every time.  It felt awesome! I'm still struggling with an injury from earlier in the summer. I had taken some time off in hopes that it would heal itself, but it has resurfaced with this 10k training.  So I will be going to physical therapy this week to see if they can help me get back to full strength.  I'm saying a prayer that they will able to help me recover!

Focus one day at a time.
PiYo is going great.  I continue to notice changes and find myself getting stronger each day.  I only have 3 weeks left (including this one) until the end of the program.  I haven’t decided if I will do another round.  I really like the flexibility that PiYo is giving me.  I may do a hybrid of PiYo with another program.

Pumpkin Pie Quinoa Breakfast

Quinoa breakfast is one our favorites and since it is the season of ‘pumpkin all the things’, I thought it was only appropriate to make a new version. :)  I LOVE this recipe.  It also has the added benefit of making your house smell lovely!  I found myself wishing for some pecans for a topping but I added a tablespoon of dark chocolate to make it even more appealing to the boys.  The LOVED it!  Enjoy!

Pumpkin Pie Quinoa Breakfast

Ingredients: (organic & non-gmo if possible)

1 cup quinoa
1 ½ cups water
1 tsp cinnamon
2 tsp vanilla
2 tsp pumpkin pie spice
½ cup pumpkin puree (not pumpkin pie puree)
2 tbsp maple syrup (optional)
1 can coconut milk

Instructions:


  • Combine the quinoa, water, cinnamon, vanilla, and pumpkin pie spice in a pot and bring to a boil. 
  • Once boiling, cover, lower heat and let simmer for 15 minutes until you can fluff with a fork. **Cooking quinoa can be a little tricky. Make sure you do a low,slow boil. If you cook it too quickly, it won’t have time to soften and absorb the flavors.
  • When the quinoa is done, turn the heat to low and add the pumpkin puree and maple syrup and stir.  Let it heat for a couple of minutes,
  • Now add your can of coconut milk to a separate pot to warm. I like to sprinkle a little cinnamon in with the coconut milk as well. 
  • While the milk is heating, start to stir with a whisk. You will want to froth the milk the entire time it is heating. This will give it a creamier texture. 
  • After the coconut milk is warm, scoop a portion of the quinoa mixture into a bowl and top with the coconut milk. Serve immediately. 


**Leftovers: Store milk & mixture separately in sealed containers in the refrigerator.

I’m so excited for this new program to come out from my favorite trainer Tony Horton! He is the awesome creator of the P90X series. P90X3 is the first program that I ever completed start to finish. It was after my back surgery and it was a HUGE accomplishment for me!  But those programs are considered extreme fitness and quite frankly they are tough! LOL Maybe you are looking for something just to get started. Hardcore workouts aren't for everybody. Whether you used to be in shape and feel fitness has now passed you by, or you've never worked out a day in your life, Tony's P90 workout is your easy-to-follow way to lose substantial weight, have the energy to run and play with your kids, and feel better in everything you do—without the agony of high-intensity exercise. It is a great starting point to teach you how to properly introduce your body into a fitness regime.

PiYo Week 5 with Meal Plan & 10K Training

I love Sundays. They are the perfect time to sit back and reflect over the past week. I try to make note of all of the things that I did well along with those I could work on. My running was a struggle this past week as it has been since I started this 10K training. I find myself getting so frustrated knowing

where I was when I was doing my half marathon in the spring versus where I am now. It is easy to get into your own head and allow the negative self talk to take control. So this morning, when I headed out to meet my best runner friend for our scheduled 5 miles, quite honestly, I was not optimistic. I was dreading it. I had struggled all week to get through 3 miles and now I was going to do 5? But I went anyway. It was a crisp, chilly morning. These are the kinds of days where I love to run. I like the nip in the air rather than the heaviness of heat and humidity. And much to my surprise and delight, it wasn’t too bad of a run! I struggled during mile 3 when we climbed the biggest hill and some leg/hip pain started. I had to walk for a minute or so but otherwise was able to power through.  My running buddy really helped me keep going.  I don't know what I would do without her! :) I cannot tell you how happy I am after today. This is the first time in many months where I feel like I might actually be getting my groove back! Yay! :) This week I will have two more shorter 3 mile runs and then up to 5.5 miles next weekend. There are only 2 more weeks until the 10K!

I like to make my own pumpkin pie spice rather than buying it pre-mixed from the store.  I thought I would share the mixture with you so that you can do the same!  I mix everything together and store it in a jar.  It will make approximately 3 tablespoons.

Ingredients: (organic & non-gmo if possible)


1 ½ TBSP Cinnamon
1 tsp Nutmeg
1 tsp Allspice
1 tsp Ground cloves
1 tsp Ground ginger

Add all ingredients to bowl or jar and mix.  Store leftover in a sealed container.

It is where I first started to see success in my own journey, before I became a coach myself. I finally found a place where I felt safe, motivated and accountable to my own goals and I loved the feeling of us all working towards the same goal! The challenge groups serve as accountability and support and in my opinion are the key to what makes our clients so successful. I found even more accountability once I became a coach myself! I wanted to practice what I was preaching, as they say.

PiYo Week 4 Meal Plan & 10K Training

I’m still recovering after a busy weekend and heading into week 4 of PiYo. Time is flying by so fast! Last week went pretty well. I stayed on track with my workouts and did much better with my nutrition than I have been up to this point. We spent the weekend helping my parents cut wood for the winter. I used to hate it as a kid when we were forced to do it, but it was fun this weekend working together with my family. I’m so grateful for everyone that came to help. And it was a fantastic workout! There were many sore muscles afterwards. :)

My running is getting better as well. I feel like I’m finally starting to get into my groove again which is good considering my 10k is only a few weeks away! I’m starting to think about what I will do after this race. For me, I always have to have my next goal in mind. THAT is what keeps me pushing. Especially in the winter months when it is cold and snowing and all you want to do is cuddle on the couch! This whole journey for me is about being healthy and fit. The fact that my waistline will shrink as a result is just a happy side effect. :) I’m also starting to plan ways to navigate the season of fall. Fall is my favorite time of year. I love the weather, my anniversary is in October <3 and it is the season of everything pumpkin. My goal this year will be to clean up some of my favorite fall recipes and share them with all of you. There is no reason we can’t still enjoy the flavors of the season without over doing it. Stay tuned!
